“There’s a fish back home called a razor fin. If you braise it in miso and serve it over dried seaweed with a ginger sauce it’s fantastic. Enough sweet to offset the saltiness of the sea weed and the fish itself is a mild flavor that honestly tastes a lot like mushroom.”
